Hello! We hope you are well and staying active and healthy as much as possible considering the circumstances. If you are well, please go on the recommended daily walk – remember your sun cream (it is dazzling out there!) and your bottle of water to keep hydrated.
The Felix Project delivered some lovely vegetables on Tuesday so I tried to be creative and made vegetable tian.
Here’s how I did it….
Method
Sautee chopped onion and crushed garlic.
Once cooked, line the bottom of the dish.
Slice the vegetables and make a fancy pattern so your food looks as good as it tastes!
Sprinkle on some salt and herbs and brush a little oil over the top.
Bake in the oven for 30 minutes at 180 C.

It’s a really tricky and testing time for everyone but sticking to a routine will help you. Try and go to bed and get up at the same time each day. Set a time you have to do your school work and do the same for relaxing and playing. Please do not spend all day attached to a computer/ipad/tv screen!
You may want to keep a diary. This is a good way to keep your mental health in check. Write down your thoughts and feelings – good or bad – and then you can move on.
